Your favourite country on No Reservations.

Quite a few! Japan, I liked Spain & India. Singapore was very good. I believe it is the food capital of the world—a small place with Malay, Chinese and Indian cuisine.

As a chef, does it bother you that the family no longer sits and eats together?

I too eat very rarely with my family. I travel a lot. Obviously it bothers me.... But Discovery Travel & Living fantastically gave me this freedom. I choose where I go & what I write...I enjoy what I’m doing.... It can’t last for ever.

What do you think of Indian street food?

Some of the best I’ve had, specially Mumbai.

The strangest food you’ve come across?

Having a live octopus in Korea. It grabs your tongue and clings to it. Quite challenging!

Do you ever eat at a restaurant?

Fine Dining does not interest me unless it’s truly distinct and remarkable. Fine dining food cooked by a chef in Mumbai will taste the same as in a fusion restaurant in NY or London. I’m more interested in what people...
